Growing up in a Polish/Ukrainian family I have come to know my way around a perogy - I've made tens of thousands of them over the years, starting at a young age. I'm happy to share with you the knowledge passed down to me from the amazing cooks in my family, as well as a few tricks and tips I've learned along the way.
Perogies are an easy and fairly inexpensive meal. Add a salad and beans or kielbasa and you have a healthy, hearty and quick meal for those days when you don't have a lot of time to cook. The initial effort you put into making them can pay off for months to come as they will keep for well over a year in the freezer if properly bagged. I normally spend many days during the late Fall or early Winter making hundreds of perogies to last us until the next Fall.
