Sauerkraut Perogies

Sauerkraut Perogies are one of the most popular and well known types of perogies.  Growing up in a Polish/Ukrainian family I have come to know my way around a perogy - I've made tens of thousands of them over the years, starting at a young age.  I'm happy to share with you the knowledge passed down to me from the amazing cooks in my family, as well as a few tricks and tips I've learned along the way.  

Perogies are an easy and fairly inexpensive meal. And we all know how good fermented foods, like sauerkraut, are for your gut health. Add a salad and beans or kielbasa and you have a healthy, hearty and quick meal for those days when you don't have a lot of time to cook.  The initial effort you put into making them can pay off for months to come as they will keep for well over a year in the freezer if properly bagged.  I normally spend many days during the late Fall or early Winter making hundreds of perogies to last us until the next Fall.
